This time of year many people wake up to find that mother nature has delivered a load of snow or ice. Instead of despairing take advantage to make a cup of your favorite tea or coffee and enjoy it with these biscotti. Or after shoveling snow or fighting the other commuters to get home relax with a cup of cocoa and a slice of biscotti. In the summertime these go great with lemonade for a picnic treat. Find your own favorite time to enjoy these classic treats.

Biscotti

Ingredients (conversion table)

1 stick (1/2 cup, 1/4 lb.) butter or margarine
1 cup sugar
2 eggs
3 cups flour
1 Tbsp. baking powder
2 tsp. lemon extract
1 Tbsp. anise extract or 1 oz. anisette
1 to 2 tsp. grated lemon rind

Preheat oven to 350 degrees. Cream together butter and sugar. Add eggs, lemon rind and extracts. Mix well. In a separate bowl combine thoroughly flour and baking powder. Add to butter/sugar/egg mixture. Mix until dough forms a ball (if it is too dry add milk, 1 tbsp. at a time). Divide dough in half. Shape each half into a log about 3/4" high. Place on lightly greased cookie sheet. Bake 20-30 minutes. Cool. Cut into slices about 1/2-3/4 inch thick. Enjoy as is or toast slices.

You may want to try adding the following:

blanched almonds
skinned hazelnuts
candied citrus peel
